Custard powder cake

Custard Powder Cake...

Reallllyyyyy Yummmyyyyy and easy recipe...juz one bowl mixing...
Recipe Courtesy - Slightly adapted from Best Recipes

Self Raising Flour - 1 Cup
Baking Powder - 1/4 tsp.
Caster Sugar - 3/4 Cup
Custard Powder (Vanilla) - 3 tbsp
Butter - 125 gms
Milk - 1/2 Cup
Eggs - 02
Vanilla Essence - 1 tsp

Melt Butter (should not be hot).. To this add milk, eggs, Sugar & Vanilla essence. Mix and add custard powder, baking powder & self raising flour (flour u can sift and add, but i havent ). Beat for 3 min...

Pour on to a greased and floured cake pan
Bake for 35-45 min/ 180 deg...

I have dusted it with icing sugar, chocolate curls and almond flakes...You can do any icing/ frosting on this cake...but the plain itself tastes sooooo yummmmmmm....

Tutti Frutti Cake

Tutti Frutti Cake

1 cup-All purpose flour
1 tsp Baking Powder
1/4 tsp Baking soda
3/4 C Sugar
1/4 cup butter
1 egs, room temperature
1/4 C Milk
1/4 C tutti frutti
1 tsps pineapple essence/ any fruit essence

Preheat oven to 175 C. Grease and flour a loaf tin.
Sieve - maida, baking soda and baking powder.
In a bowl, mix butter and sugar till smooth and creamy
Add egg and beat. Add pineapple essence to the mix
Add the flour alternating with milk, starting with flour and ending with flour. Do not over beat.
Sprinkle some flour over the tutti frutti. Mix to get it coated. Add this tutti frutti to the batter and fold gently into the batter.
Pour batter into the greased loaf tin.
Bake in preheated oven for 40-45 mts or till a toothpick inserted into the cake comes out clean....

Basic Cake - a beginner's recipe.........



Basic Cake (a beginner's recipe)

All purpose flour - 1 Cup
Baking bowder - 1 tsp
Eggs - 03
Oil - 3/4- 1 C
Sugar - 1 C
Essence (vanilla/ almond / lemon/ banana) - 1 tsp
Sift Flour and B.P twice. Keep aside

Beat egg till pale yellow and double in volume . Add sugar and beat again
Add almost 1 C veg oil to this(incase if u are adding 3/4 C oil add a little milk for the batter to be in correct consistency). Beat again for a min. Fold in flour mix and essence.

Pour into a greased and dusted pan and bake in a preheated oven (190 deg) for 18-20 min

Caramelized Pineapple Upside Down Cake....

....and this is another personal.....hmmm family fav. Quite an easy one.... Rich with flavous, really moist and gorgeous looking cake. This is the second time i have baked this one - a foolproof recipe.

Caramelized Pineapple Upside down Cake

Pineapple Pcs, Candied Cherry

Brown Sugar - 1/2 C
Butter (Unsalted) - 3 tbsp

All Purpose Flour - 1 1/2 C
Baking Pwder - 1 1/2 tsp
Salt - 1/4 tsp
Butter - 1/2 Cup or 113 gms appr
Eggs - 02
Sugar - 1/2 C
pineapple juice or syrup - 1/4 C
Milk - 1/4 C

Cream 1/2 C Butter to smooth. Add Sugar. Beat untill smooth and fluffy..
Add Eggs one by one...mix to a pale yellow smooth paste..

Mix Flour, Baking powder AND salt. Sift
Add to Egg Mix alternating with juice and milk.

Now melt butter in a cake pan. Add brown sugar and caramelise it . Arrange pineapple pcs and cherries on caramel in any design. Pour batter on top of it . Bake in a preheated oven (pref 180 deg)untill cake gets browned on top(35-40 min)

Afghani Kabab with tomato gravy........



Afghani Kabab with tomato gravy
Recipe adapted from KhanaPakana

Beef Mince: 250 gms
Ginger garlic paste - 1.5 tsp
... Onion - 01, finely chopped/crushed
salt
1 tsp ghee
Paprika powder/ red ch powder - 2 tsp
Egg - 1/2 (optional)
Bread slices - 01 , soaked in milk or 1-2 tbsp besan powder(for binding).

Mix all Ing. Make kababs . Shallow fry and keep aside

For Gravy:
Make a paste of 03 tomatoes, 3-4 cloves garlic, 1/2 tsp pepper, 1 tsp paprika/ red chilli powder, 1/4 tsp cumin and 1/4 tsp coriander seeds.

Heat 1 tbsp oil. To this add 1/2 tsp cumin, 1/2 tsp coriander seeds and 1/2 tsp peppercorns. Saute and add the paste. Cook till oil raw smell changes. Add fried kababs and cook.

Garnish with ginger juliennes and coriander leaves....

Kozhi Ada (Chicken filled crispy bites)




  Fried Kozhi (Chicken) Ada


For Dough:
Plain Flour/ Maida - 2 C
Ghee - 2 tbsp
salt
Water
Make smooth dough (little harder than poori dough). Keep aside.
Filling:
1/2 Kg boneless chicken
Onion - 1-2, finely chopped
2 tbsp chopped garlic, 2 tbsp chopped ginger, 1 tbsp chopped mint leaves, 2 tbsp chopped coriander leaves, 1 tbsp chopped curry leaves, 4 tbsp chopped green ch.
Fennel seeds - 2 tsp
Turmeric powder - 1/2 tsp
Red Ch powder - 2 tsp
Garam masala powder - 1 tsp
Salt
Cook chicken adding little turmeric powder, red ch powder and salt. Mince using blender or hand.
Heat oil. Add fennel seeds.
Add Onions. Saute (till trnsparent). to this add ginger, garlic, green ch. Saute untill done. Now add minced chicken. Saute and add masala powders. When raw smell changes add chopped leaves. Cook till dry and crispy.
Now make small balls out of dough. Roll them out into thin poori sized circles. Stuff with filling. fold (half moon shape).Seal the edges.
Deep fry in hot oil.
